To celebrate Epiphany, Maxime Frédéric, Pastry Chef of Cheval Blanc Paris, presents a Galette des Rois called "La Douillette".
An homage to his Normandy roots, this apple-based galette was created in the spirit of a douillon, one of Maxime Frédéric's signature desserts for Cheval Blanc Paris.
It starts with classic pastry, delicately overlaid petal by petal and then caramelized just enough to achieve a crispy note. At its heart are a fine layer of frangipane, melt-in-your-mouth apples from Normandy and white raisins.
A reminiscence of childhood based on authentic, gourmet and comforting flavours.
