The festive yule log of Cheval Blanc Paris
21 November 2025To celebrate the festive season, Maxime Frédéric, Pastry Chef at Cheval Blanc Paris and his team have created a dynamic design: a swirling Christmas tree surrounded by an elegant circle of delicately placed gifts.
Named “The King of the Forest”, this indulgent yule log is composed of several elements:
At its centre stands a handcrafted chocolate tree, piped in the style of a Saint-Honoré cake, with sweeping curves that resemble a precious ornament. Each tier unfolds like a movement in a symphony, sculpted in 75% dark chocolate. Some layers hide a praline heart with speculoos biscuit or a mendiant adorned with pistachios, hazelnuts, almonds and candied orange peel.
Golden needles melt away to reveal the intensity of textured chocolate that evokes the raw, unrefined essence of pure cacao.
At its summit, a proud chocolate horse rises like a star atop the tree.
At the base, a crown of gifts conceals a dessert inspired by the classic Poire Belle-Helene pear: almond chocolate crisp, biscuit with spiced notes enhanced by tonka bean, milk chocolate cream, poached pears wrapped in a pear-vanilla gel delicately infused with fir liqueur, all encased in a light mousse made with fromage blanc and honey from the very tree it honours.
“The King of the Forest” celebrates wonder, the promise of delight and the joy of sharing the festive season with those dearest to us.
